Sapling is a small but perfectly formed wine-focused venue in the heart of Dalston, east London.
Our client was new to the world of restaurants and bars, therefore there was an ongoing requirement for general advice and guidance in addition to delivering the products for which we were retained.
At feasibility stage we assisted the client with navigating planning, licensing and the restrictions of operating in a Special Policy Area, before going on to lead on the creation of a culinary proposition that satisfied various planning and licensing requirements and restrictions whilst speaking to the discerning audience that the venue would attract. This included a retail, ‘larder’ proposition to sit alongside the anchor wine list and main kitchen menu.
We led on the overall project management and creative direction, developed the name and brand identity, and delivered an interior design scheme with our partner practice Transit Studio.
