Olive Bar & Kitchen was the first venue that renowned restaurateur AD Singh opened in 2000. 17 years later, and with 36 restaurants and counting, we led on the creative and strategic development of an updated iteration of this Bombay institution, respecting the legacy and heritage of the brand whilst taking it forward for another 17 years of strong trading.


This centred on bringing the finest seasonal food and drinks back to the forefront of the venue, working closely with ex-Fat Duck sous chef Rishim Sachdeva and a newly imported British bars manager.


The project involved a significant interior refresh executed by local designer Shweta Kaushik, extensive operational design including a custom-made bar, open kitchen finishing counter and the installation of a new kitchen garden, new brand language and communication strategy, food and drink product development, and guest experience training.
