12 Mar Our latest project – Sapling, opens in Dalston
In collaboration with our partner design practice Transit Studio, we’re finally ready to introduce our latest project to the world. Sapling in Dalston has been a labour of love for us all over the last few months and we’re delighted with the result, having worked closely with the founder Robert Ritchie to do his dream of a wine-focused restaurant and larder justice.
The concept is wrapped up in beautiful interiors inspired by the history and ‘Terroir” of Dalston. The area was originally the King’s hunting ground, covered largely by oak woodland before the area was cleared to excavate clay for the areas burgeoning brick factories, needed to meet the demands of a rapidly growing city. We wanted to reference this history in the choice of materials for the interiors, which include wooden terrazzo with a mix of timber from London plane trees, sycamore and walnut offcuts alongside local handmade tiles.

What’s it all about?
As a small business ourselves, it’s always wonderful to work with talented, enthusiastic people coming into the industry for the first time, especially when they come to the table with a strong vision that’s so close to our hearts – and in this case our office. Robert is passionate about wine – skewing the minimal intervention trend to some extent – and locally sourced produce from fellow small business owners. The wine list boasts over 100 bins, with a rotating selection of 36 by the glass and coravin. Food comes courtesy of Jon Beeharry, formerly of Bistroteque and the guest experience is managed by Dan Whine, previously at the helm of Plateau and a winemaker himself.
